Pea and Mint Soup Shooters

Ingredients & Amounts

  • 2 cups fresh peas (or one 16 ounce frozen package)
  • 1 cup vegetable broth 
  • 1/4 cup minced fresh mint
  • 1 tablespoon lime juice 
  • 1 teaspoon ground cumin
  • 1/4 teaspoon salt 
  • 1-1/2 cups plain yogurt

Directions

Place the peas, broth, mint, lime juice, cumin and salt in a blender. Cover and process until smooth. Add yogurt; process until blended. Refrigerate for at least 1 hour. Top with Sprouts or grated carrots (optional).
