2 c Quinoa, cooked
1 c Chopped Parsley
1/2 c Chopped Green Onion
1 Garlic Clove, crushed
1/2 ts Fresh Basil
1/2 c Lemon Juice
1/4 c Cold Pressed Olive Oil
1/8 ts Sea Salt
1/8 ts Pepper
1/2 c Chopped Tomatoes, optional
Directions
Mix first 9 ingredients & refrigerate for at least two hours. If adding tomatoes, mix in just prior to serving, to retain texture.
Garnish with fresh basil leaves and / or sliced black olives.
